Vegetables. As parents, I think just about all of us have gone through a time of “vegetable revolt” with our children haha! Maybe you are now an adult and still have a bad taste in your mouth from your childhood vegetable nightmares. Trust me, veggies can taste amazing!!
When people think of burritos or nachos or the like, they usually think of iceburg lettuce and tomatoes on top. I don’t think I have ever bought iceburg lettuce in my adult life. Why? Well, it’s not that iceburg lettuce is bad, its that spinach is better, WAY better for you! Here is the nutrition data for iceburg lettuce and here is the nutrition data for raw spinach and cooked spinach. The nutritional differences are quite astounding! There are many amazing vegetables, but spinach is SO good for you and SO versatile. Spinach alone really does not have a lot of taste. I think this is why so many people think it’s gross. Pouring slimy, soggy spinach (with NO flavor) from a can into a pot, heating it up and eating it isn’t the tastiest thing ever, I’ll admit. (Although I do have a REALLY good spinach recipe I will share soon.) You can add spinach to so many different recipes to give it that extra nutrition boost and it doesn’t affect the taste! I used to chop up spinach for a burrito/nacho/taco topping but my son would just pick it out. That’s when I started putting it in the meat. It has a much better taste (takes on the taste of what its in) and its much harder to pick out! 😉
Tumeric comes from the root of the Curcuma Longa plant. It is in the same family as ginger and is one of the spices used to make curry. This article talks about all the amazing benefits of tumeric. It is anti-inflammatory and helps prevent cancer and Alzheimer’s disease. It also improves liver function and lowers LDL cholesterol. Plus it really adds amazing flavor to recipes! Make sure you get just tumeric and not a curry spice blend. There is not enough in the spice blend to really help much. Health food stores usually carry it in bulk or most grocery stores carry it as well. The Mountain Rose Herbs and the bulk herb store are great options to get tumeric and many other spices as well!
What You Will Need
2lbs ground turkey (or beef, which ever you prefer) *this is what we use to feed our family of 4*
1/2 c green chiles (roasted/diced preferably)
2 tsp tumeric (careful, it will stain!)
2 tsp garlic powder or 2-3 garlic cloves
1 tsp onion powder (feel free to use real onion, my son just isn’t a fan)
1/2 tsp paprika
salt and pepper to taste
1-2 c chopped spinach (we use organic baby spinach leaves)
Put your ground meat in a large skillet. Add chiles and spices. Your meat will be a bit yellowish in color because of the tumeric. Cook the meat until it’s almost done (about 5 minutes out) and THEN add your spinach. You want the spinach to cook, but not the entire time. The leaves should be wilted though. 😉 You can use this meat for tacos, nachos, burritos, as stuffing for squash or peppers, on spaghetti, so many uses! It’s so good and so good for you!
